Led by Chef Mariana, SALAM’s vision is to introduce Australians to genuine Lebanese cuisine using time-honored recipes passed down through generations.
Our menu features freshly baked manakish, homemade bread, and daily specials, alongside vegan and vegetarian options.
SALAM goes beyond dining, offering a grocery section with Middle Eastern ingredients for those looking to recreate Lebanese dishes at home. More than just a meal, SALAM invites you to experience the warmth and richness of Lebanese village life.
About Chef Mariana Chedid
Born and raised in Lebanon, Mariana migrated to Sydney Australia at the age of 18. In 2007, she moved to Melbourne and quickly fell in love with the culinary culture that the city had to offer.
At the age of 27, inspired by the story of ‘Julia Child’, Mariana decided to pursue her dream of becoming a chef. She travelled to France to follow the footsteps of her idol.
By 2014, Mariana had completed a comprehensive training program in 'Cuisine' and 'Pâtisserie', and graduated with a ’Grand Diplôme’ from ‘Le Cordon Bleu’ in Paris.
Mariana then pursued another learning journey with ‘Brasserie Thoumieux’, under the mentorship of Chef ‘Jean-Francois Piège’ .
Mariana's culinary career started in Paris at the Michelin-starred restaurant ‘La Tour D'argent’, under the supervision of Chef ‘Yohan Lastre’.
Upon returning to Melbourne, she embarked on an exploration and experimentation journey using the finest local produce, ultimately enabling her to forge her own path within the culinary scene, finally founding ‘Brûlée’ in 2020.
Now Mariana is introducing Australians to the true flavours of authentic Lebanese food with Salam opening late 2024.
